Truffle Parmesan + Black Garlic Snack Crackers

Serves 12-15; Prep Time: 5 Minutes; Cook Time: 7-10 Minutes

Ingredients:

• 2 sleeves of Saltine crackers
• 1/2 cup olive oil
• 1/2 cup Canola oil
• 2 TBSP Truffle Parmesan + Black Garlic Seasoning
• 4 TBSP Brown Sugar
• 2 TBSP Honey

Directions: 

1. Carefully layer all crackers in a Ziplock bag large enough to move around and adjust the crackers. 
2. Whisk together both types of oil, Truffle Parmesan + Black Garlic Seasoning, brown sugar, and honey.  The brown sugar will not disolve.
3. Slowly pour half of the olive oil mixture into the bag making sure to distribute any brown sugar, as it may clump. Move crackers around so the mixture is evenly coated.  Pour in the remaining final mixture. 
4. Let the crackers marinate on a flat surface for at least 6 hours (preferably overnight or 24 hours).
5. Bake at 350°F for 7-10 minutes.  The sugar burns quickly, so pull from oven as soon as the sugar has begun to melt. 
6. Let crackers cool completely, then serve and enjoy!

Sweet Bourbon Grilled Salmon

Ingredients:

• 2-4 6oz. filets of Coho Salmon
• Kosher salt
• Fresh ground pepper
• 1 bottle Sweet Bourbon Grillin' Sauce
• 1/2 cup olive oil

Directions:

1. With a basting brush, lightly brush both sides of your salmon filets with olive oil, reserving a little to brush on your clean grill grate.  Important: Your grill grate must be clean to prevent the salmon from sticking to the grill.
2. Lightly season each side of your salmon with kosher salt and fresh ground pepper.  Preheat grill to 400°F.
3. While the grill is preheating, pour 4oz. of the Sweet Bourbon Grillin' Sauce into a small saucepan and heat on stove until sauce starts to slightly simmer.  Sauce should be warm, not boiling.
4. Once the grill reaches the desired temperature, brush the clean grill grate with olive oil and place salmon - skin side up - on the grill. Close grill lid and let cook for five minutes.
5. With a wide spatula, flip salmon and brush top side with Sweet Bourbon Grillin' Sauce and cook for 5 minutes longer.
6. Glaze salmon with Sweet Bourbon Grillin' Sauce once more and remove from grill.  Let cool for 5-10 minutes and enjoy!

• 8 jalapeño peppers
• 8 slices bacon
• 8oz block cream cheese
• 2 garlic cloves, grated or finely chopped

• 1/4 Tsp smoked paprika
• Salt and pepper to taste
• Green Jalapeño Pepper Jelly
• 1/2 cup shredded pepper jack cheese

Directions:

1. Half and core the jalapeño peppers, removing the seeds and white parts.
2. Mix together softened cream cheese, whole milk and garlic cloves.  Season with paprika, salt, and pepper.
3. Add the Green Jalapeño Pepper Jelly and half of the shredded cheese to the cream cheese mixture in Step 2. 
4. Stuff the cored jalapeños with the cream cheese mixture.
5. Once stuffed, wrap each jalapeño in a slice of bacon and place on a sheet tray.
6. Bake 375° for 20-25 minutes until bacon is crispy and peppers are bubbly.
7. Top with more Green Jalapeño Pepper Jelly and enjoy!

Directions: 

1. Preheat oven to 325° F.  Butter four 4-oz. ramekins.
2. Combine parmesan cheese, heavy cream, salt, pepper and Black Truffle Oil in a small bowl. Mix well.
3. Crack one egg into each of the ramekins.
4. Pour the heavy cream mixture atop eggs evenly across the ramekins.
5. Bake for 10-20 minutes, until yolk is just set.
